In Preparation

Good morning, everyone! Sorry, no pictures again today, but I do have a few things to say. Our daughter and her family is home from New York, so the camera will be coming home soon! :)

They had a wonderful time in New York, Kaleb, my 11-year old grandson, got to go along. He and Rosemary saw some of the great sites in New York. When she gets the pictures downloaded, maybe I can put some on here.

On Monday I am going in for some extensive surgery. Today I am in my second day of clear liquids. Oh boy! 7UP, GingerAle, Broth. I’m hanging in there, but I have sure been hungry. Well, maybe not hungry, because I am working to keep myself hydrated and that makes me feel full, just needing to eat some nutrients, I believe.

But, in the meantime, Ken must eat. I made him a simple dinner last night because he had been out working on our car for 2 days straight and I wanted him to have something good and hot, even if I couldn’t!

I had a couple of white sweet potatoes (they are delicious) and some apples that were going to go bad if I didn’t cook them, so I sliced those up, put about 1 teaspoon soy butter in the iron skillet and let them sauté with about 2 Tablespoons of organic brown sugar. When they were nice and fork tender and carmelized, I added some currants (about 1/4 cup). Ken and his parents ate them and said they were very good. So, this is a use of sweet potatoes and apples if you have some you need to use up right away. The white sweet potatoes were smaller than your average sweet potato. They were long and thin. I used two of them. I used only 1 apple and I believe it was a Gala apple.

I also water sauteéd some red kale and put some black fig vinegar over it. There was also a nice big salad with lettuce, green onions and radishes all from my mother-in-law’s garden. Yes, she is still growing and harvesting stuff from her garden! She amazes me. I’ll post some pictures on here of her garden.

I wish I had her knowledge or even her desire to work out in the garden. I am totally lost when it comes to that.

Now the garden: She has tended this garden over 25 years, it is organic, even though it is not certified, we never use any chemicals on it!
