Sometimes the simple things are the best. As you know I had surgery on Monday and have been recovering the past few days. I am doing very well. There is a lot of stuff I cannot do, however, so Ken has had to be my chief cook and bottle washer!
Usually when Ken is in charge of dinner, we have chinese. I always say, “Ken, you’re in charge of dinner tonight,” and his response is, “We’re having chinese!” But, this week he has been great! Today Ken made rainbow coleslaw. Delicious! We are also having a steambasket full of veggies. Sweet potato, cauliflower, carrots and brussel sprouts. I have also defrosted mustard and collard greens which have been gently simmering on the stove. Sorry, I have no pictures still, but when Ken comes home from Indy, he’ll have the camera back! YEAH!
Rainbow Coleslaw
1/4 large head green cabbage
1 medium to large beet
1 large carrot
8 dates, pitted and roughly chopped (not medjool) (Ken felt it could have used more dates, but I liked it like this)
1/3 cup raisins, roughly chopped
1/3 cup chopped macadamia nuts, roughly chopped
(You can also add shredded apple to the salad)
Shred the cabbage, beet and carrot, add other ingredients and blend.
This salad has a natural sweetness, and with all the different raw vegetables this slaw has to be loaded with vitamins, minerals, enzymes, and phytonutrients. Even the dressing has to be packed with nutrients. but Ken likes the creaminess of a coleslaw, so we made a dressing of 1/2 cup raw cashews, 1/8 cup of distilled water, 1 teaspoon soy sauce, 1 teaspoon agave nectar, and 1 teaspoon fresh lemon juice, blend together. It was very good and creamy for the dressing. You can adjust and add ingredients to this to make it more to your liking. Some balsamic or fig vinegar would probably be good also.
So, Ken will be home tomorrow and we’ll make some foods and post pictures!
Before I end this post on foods, I want to give you a link to go to to read about “natural flavors” in our foods. I think it is important to go here to read about this information and then do your due diligence and respond accordingly. The link is here at tangergreen.com.
