Here’s another leftover turkey recipe.
Shredded leftover turkey
1/2 head cabbage chopped coarsely
1 head broccoli
3 cups low-sodium vegetable broth
1 tsp red pepper flakes
1 t granulated garlic (or 2 garlic cloves chopped)
salt and pepper to taste
Place turkey, chopped cabbage, pepper flakes, garlic and salt and pepper into soup pot. Cook until cabbage is fork tender. Add broccoli. Cook until just done. Ladle into soup bowls and drizzle with just a bit of really good evoo.
