1 onion, chopped
1 red pepper, chopped
1 green pepper, chopped
1 large portabello mushroom chopped into small pieces
2 cups boca crumbles
1 large can crushed tomatoes
1/2 teaspoon salt
Pinch of black pepper
Sliced provolone or rice cheese to cover
1 1/2 teaspoon italian seasoning
1 loaf french bread, sliced lengthwise
In a skillet that you have wiped with olive oil on a paper towel, saute the onion, peppers and mushrooms until the onions are translucent. Add the boca crumbles and heat through. Add the crushed tomatoes, salt and pepper. Heat through.
In the meantime, slice the french bread, and spread the skillet mixture onto the bread. (I put it on the top and bottom pieces of bread.) Cover with the cheese and then sprinkle italian seasoning over cheese.
Bake in a 350 degree oven until cheese is melted and somewhat bubbly.
If you would rather not use the boca crumbles, you can substitute by just using more mushrooms in the recipe.
