SPINACH, SAUSAGE AND SHARP CHEDDAR FRITTATA

1/4 roll of sausage of your choice
4 eggs
1/4 cup sharp cheddar cheese, shredded
1/8 cup 1/2 and 1/2 or heavy cream
10 leaves of fresh spinach, rolled and sliced into confetti
red pepper flakes to taste
salt to taste
pepper to taste

Brown sausage in 10″ oven-proof skillet (I use an iron skillet). Drain sausage and put back into skillet. Crack open eggs and place into a mixing bowl along with cheese, 1/2 and 1/2, red pepper flakes, salt and pepper. Mix together well. Pour over top of sausage. Sprinkle spinach confetti over top and then run knife around through egg mixture to incorporate.

Bake for 15 – 20 minutes on 350 degrees. Dish is done when knife inserted into center comes out clean.

I served with sliced tomatoes and almond flour muffins
