BREAKFAST SMOOTHIE

1/2 cup soymilk or rice milk
1/2 – 1 frozen banana
1 cup frozen pineapple
1/2 cup water
1 cup frozen peaches
1 Tablespoon ground flax seed
2 cups frozen, raw spinach

In a blender, place 1/2 cup soymilk or rice milk. Add 1/2 – 1 frozen banana. Blend until creamy. Add 1 cup frozen pineapple, blend until smooth. Add 1/4 cup water (I used distilled water). Add 1 cup frozen peaches, blend until smooth. Add 1/4 cup water. Add 1 Tablespoon ground flax seed, blend. Add 2 cups frozen, raw spinach (see tip below), blend until smooth. If you need to add more liquid, I just use distilled water.

Tip: I buy the baby spinach, wash it, make sure it is thoroughly dried, and then freeze it myself in 2-serving (4 cup) bags. I don’t care for the spinach that you can buy frozen in the store because it seems to have already been cooked somewhat, and doing it the way I do, it is still raw, but has the texture of potato chips and blends up nicely.

Tip #2: If you have a HealthMaster 100 or a VitaMix, you can put everything in at once. I just use a KitchenAid blender right now and I have to do it gradually.

This is a great way to get your kids to eat some fruit and veggies. I wish we had taken a picture of Aden, our grandson, drinking his smoothie in the morning. We called it his “Alien” juice! Sometimes he had 2…oops! I changed a lot of diapers that day! But, what I am trying to get across is that Maisy, Moriah and Aden all 3 loved the drink. They especially loved helping me make it.
