Thanks, Ken for starting the posts for 2009!

We did have a wonderful time and we have heard from some of the people who were here and they had a wonderful time also.

I'm not sure how Ken didn't get pictures of all the food, but he made a delicious pan of "Vegan" cinnamon rolls, everybody couldn't stay out of them. We also had a Breakfast Casserole out of the Sheckells Family cookbook and Grand Marnier French Toast. It was a delicious brunch. I couldn't have done it without Ken though. He is an excellent partner in the kitchen. Not only did he cook, but he kept the dishes done up too!

Thank you everybody for coming out to celebrate with us. And, if you want to be on the invitation list for next year, let us know on here! We'd love to fill the house!

Can y'all tell he is spoiled rotten? Well, he doesn't know it yet, but I am making him a wild rice and portabella mushroom soup for tomorrow. I don't have to work again!

I followed the plan very closely while I was out of town. Sunday evening when I arrived in Indianapolis, our daughter prepared tacos, beans, & other vegetables that were within the plan. I encouraged her to post the dish.

For breakfast, as always, I had my Biometics vitamin drink, and soaked oatmeal with raisins, nuts, and a bit of agave nectar. Sunday, Monday, & Tuesday I purchased watermelon, strawberries, apples and peaches for my lunches. I also had green leafy salads with a variety of veggies.

Following the plan this closely for 14 days I have discovered that I have a difficulty with the amount of raw vegetables we have been eating.

I did not really find the 14 days to be difficult, but Jackie and I were doing it together as a team. And I am now glad it's over. This morning, as always, I had my Biometics vitamin drink. Jackie had left me some soaked oatmeal and I added raisins, nuts, and a bit of agave nectar. I then fixed Jackie a green leafy salad, grapes and juiced carrots, an apple, & celery, for her lunch & snack.

Hey Jackie. I found your website just this morning through the E2L forum on Yahoo. My husband and I started E2L just a few days ago. I realized quickly that I needed to re-learn how to cook if we were to stand a chance of succeeding on this new plan.

Your soup recipe looked great and I had nearly everything in the house. I made it for dinner just as you wrote it except that I added some mushrooms I need to use up. FANTASTIC! Something about the soup is very "meaty". Subtly flavored and extremely satisfying.

Looking forward to what you cook next!

Thanks!

Jackie,
I'm so glad you liked this and that it was a hit with Kenny, too! I had never thought of the comparison to those "icy squares" (which I used to LOVE as a kid), but I can see the resemblance. Thanks so much for giving this a try and for the shout-out.

Have a great (chocolatey) Sunday--

Ricki :)

Beth:

Thank you very much for contributing the recipe, and while yes, this is a vegetarian blog, I want people to be able to feel they can share their recipes too as long as they can be successfully vegetarianized/veganized.

In this case, I would just simply leave out the fish sauce, and I would use veggie broth instead of chicken broth. In place of shrimp or chicken, you could use some kind of meat substitute if you wanted, but I think this recipe would be just simply delicious without it!

Thank you, Beth. Ken and I will try this.

Speaking of sushi, Kelly and I have found a great new sushi place on Bardstown road called Oishii Sushi. They are located at 2245 Bardstown Rd. in Louisville, 502-618-2829. They are open MO-TH: 11-2 & 5-10; F: 11-2 & 5-11; SA: 5-11 & SU: 5-9. It's very small and crowded thanks to an article in Velocity (and we went during the week). For the first few months it was open; all the truly religious sushi fanatics in search of the best sushi had discovered it and kept it a secret. Velocity let the secret out of the bag so it gets pretty crowded now. Normally we prefer Sakura Blue and our favorite is Wasabi on 82nd in Indy. This surpasses by leaps and bounds Wasabi in Indy. It is by far the freshest sushi I have ever put in my mouth, it's inventive/new twists on classics, and the rolls are huge. If it's too crowded they do sushi to go and package it great. As we sat at the bar we marveled over the items that were being crafted for other patrons. I highly recommend their Crunch Munch, Hotai (scallop), Dragon Roll, and a few others that were delectable. Women talk about the joys of chocolate but this took the cake for me. They will definitely be seeing us again; we are planning sushi Mondays with Heather. By the way they only serve sushi, apps, salads, soups, and desserts; they don't serve meals like chicken terriyaki.
