Finished Day 3. Had a few times of wanting to eat something else, but I worked through it. I knew I could because I quit smoking two years ago, and I had to talk myself through sometimes minute by minute, so I knew if I put my mind to it I could.
Breakfast: Smoothie! Smoothies make me happy! Exactly the same as Day 1
Mid morning: 8 ounces of carrot, beet and cucumber juice. This was surprisingly very good. The cucumber was mild and didn’t overtake the drink. It was a beautiful, deep red color.
Lunch: Pears. We were to eat until we were satisfied. I ate two. Totally full.
Mid afternoon: 8 ounces of carrot juice. Nice and sweet. Light and airy. Delicious.
Dinner: Dinner was supposed to be a Cabbage Salad, Carrot Soup and a Vegetable Nut Loaf. I’m not much on the (raw) vegetable nut loafs, and after 2 days of almost all raw, I wanted some cooked food I could chew. This plan is 85% raw and 15% cooked. I wanted some cooked! So, I made the cabbage salad, steamed some veggies I needed to cook so they didn’t go bad and attempted to make the carrot soup (info to follow).
Cabbage Salad:
2 cups shredded, green cabbage
2 apples chopped
1 cup shredded carrots
1/2 cup organic raisins
1 lemon, juiced
1 Tablespoon agave nectar
Mix the first 4 ingredients together then add lemon juice and agave nectar, mix together and serve.
This was really good. It took a while to chew this, so we took our time and were very full afterwards.
We also had steamed acorn squash (from my mother-in-law’s garden) and steamed snow peas. I just left them plain. I wanted to experience what the taste was like without putting butter (Earth Balance) or anything else on it. Yes, it would take some getting used to, eating like this forever and ever, but it was good and I think that if I eat like this most of the time, I’m in good shape. There is a little story behind the plates with this dish. I was at an indoor garage sale last year when I saw these little plates. There were 3 of them. I’m always on the lookout for presentation dishes and I loved these. Especially when I got them for $.10 a piece. 30 cents for all! When I got them home, Ken said, “Jackie, I think these dishes are hand painted!” I went online and sure enough these plates are worth about $147 each! What a find. The person who sold them to me and I didn’t have any idea what we had in our hands. I handle them very carefully now!

Now the story about the carrot soup. I worked all day today and I was tired. The carrot soup was a raw carrot soup and had several wonderful ingredients (I will make it soon, I promise!). I ended up chopping up large pieces of carrot, celery and Yukon gold potatoes and cooked them in low-sodium vegetable broth. I put a very little pinch of Celtic sea salt on them and so, so good. Ken forgot to take a picture of them. It takes us a while to eat like this, so he is up and down from the table. Plus he was working on updating my blog.
