This is Day 2

Today is day 2 of the 14-Day Plan.

This morning was another breakfast smoothie, just like yesterday, except this time I added some strawberries and blackberries instead of pineapple. It was another delicious breakfast.

Midmorning we had 8 ounces of carrot and apple juice.

Lunch today was bananas. It was supposed to be pears, but our pears hadn’t fully ripened yet, so they were still too hard to eat. Tomorrow was bananas, so we just switched them out. We each ate 3 bananas and were full. Seriously!

Midafternoon we had 8 ounces of carrot and cucumber juice. This was good! I was surprised at the mild flavor of the cucumber. We had gone to Whole Foods for food on Tuesday evening and they had several types of local produce. The cucumbers were one of those. I hope they have more when we go back.

Dinner was a Zucchini Salad (Hallelujah Acres style) and baked sweet potatoes with less than a teaspoon of raw honey drizzled over them. These sweet potatoes were organic and very sweet all by themselves, they didn’t need much. We have also always put butter or Earth Balance on them. Not today! :)

I used a head of locally grown buttercup lettuce, chopped and placed on a plate. I added the following ingredients to a bowl:

1 medium zucchini, shredded
1 carrot, shredded
2 stalks of celery, diced
2 green onions, chopped small
1/2 green pepper, diced
1/2 red pepper, diced
1 sunburst squash, diced
3 asparagus stalks, chopped small
6 snow peas, chopped
1 Tablespoon raw, hulled sunflower seeds

Combine the above (except sunflower seeds) and place on top of the lettuce on the plates. Sprinkle sunflower seeds over top. Drizzle with 2 teaspoons extra virgin olive oil, and squeeze the juice of 1/2 lemon over it. Sprinkle with a little pinch of Celtic sea salt and some cracked black pepper. Add 1 cup garbanzo beans over the top. (If you use canned beans, drain and rinse them.) The zucchini salad is supposed to have radishes in it, but I forgot to buy them so we didn’t have any. Bummer. I love radishes. :)

I just love lemon juice and olive oil for a dressing! Yum Yum!

A Beautiful Plate of Food.  What’s so scary about this?

I’m feeling good, not starving and really not having any cravings. This is different. Maybe it is my different mind set, I don’t know, but I know it feels different this time.
