One year ago today I made my first blog post. Ken was in the process of setting up my blog site and I was so impatient that I sent out my first post via email!
I am like that! I want instant gratification too often!
Many postings have been placed here, I have made many new friends through this blog world, but I especially want to say thank you to all the people who read my blog, who encourage me, who love what I do and who respond so lovely.
So, today’s post is going to be a compilation of some dinners that haven’t made it to the blog yet. I hope you enjoy them.
Time for dinner and I haven’t been to the grocery store for a while. What to do? Get out the “stuff” left in the fridge and the pantry and make a very simple dinner. Sometimes these are the very best. Green beans cooked with new potatoes and onions. A nice salad with romaine hearts and avocado with shredded carrots. Just a simple apple cider vinegar, minced, fresh garlic and olive oil vinaigrette over the salad. Put some whole grain wheat bread with it and a well-balanced supper appears on the table.
Earlier this month I saw a recipe on Everyday Dish for Herb-Crusted Tofu with Mushrooms Marsala and Garlic Mashed Potatoes. The recipe actually originally came from The Farm Cafe in Portland Oregon. The owner of The Farm Cafe did a video on Everyday Dish TV. Here is the recipe.
I hadn’t posted pictures of this dish, even though it was totally delicious, simply because my pictures didn’t do it justice. Just know that this is well worth the effort (wasn’t really hard to do at all), and is something I know I will make again and again because I remember the flavors so clearly and I have been craving it. Thank you to Julie at Everyday Dish for her efforts in bringing this video about.
One last meal was a take on a recipe I found on Vegan Yum Yum. I love noodle dishes and she made this one look oh so delicious! The dish is Nearly Raw Tahini Noodles. The recipe is there too. Here is the picture of my version. I made my own tahini. It was easy and really good.
Ken and I loved this dish. You can serve it warm or cold. I especially loved it cold. I used soba noodles instead of whole wheat spaghetti, but I would think you could use whatever pasta you would like. I also topped mine with toasted, black sesame seeds.
