Another Friday Lunch

This was one of those Friday lunches for Rusty, Ken and I, but I had some left over, so I took some in and shared it with our favorite Sushi Chef, Henry, at Kansai in Clarksville Indiana. I took some to Henry because he had told me “Quit talking to me about your food and bring me some!” I did. I saw Henry yesterday, and he paid me a great compliment. He really liked the food!

The meal was all vegan, except for the stromboli, which had some cheese on it. I haven’t found any cheese that I find to be even close to real cheese, however, while writing this, I do recall that the mozarella style of rice cheese makes a great grilled cheese sandwich, so I’ll try that next time!

Here’s the salad for the meal. I ate it with the Perel Cuisine Fig Vinegar dressing. It is so delicious. Also, the salad I took Henry had this dressing on it.

Delicious Salad with Sprouts and Fig

This salad was simply some fresh spring mix with some peppadews, and snow pea sprouts. Those sprouts are delicious!

Yummy Mac & Cheese with a twist

This dish is actually from Susan V. at FatFreeVegan website. It is one of her daughter’s favorite foods. We loved it. Find the recipe here. I used whole wheat shells instead of regular elbow macaroni.

The vegetarian stromboli is my own creation, using the boca crumbles. You can find these in the freezer section at most grocery stores. Here are the pictures:

This was a wonderful meal. The flavors were a great combination and something I will make again and again.
