Beans, Greens and Mushroom Tacos

Taxes, ugh! I hate tax season, and therefore I put it off until the last minute. While I was looking through paperwork, I realized my breakfast had deserted me and I was starving.

I went into the kitchen and looked to see what was available. I knew I was going to start a pot of soup for dinner tonight, so I had cut up some onions and red and green peppers. I took a few of each for our tacos. I used just a smear of olive oil to sauté (I have finally learned that it takes very little oil to actually sauté in), then I had some baby bella mushrooms which I chopped up in really small pieces and added to the skillet. I let these cook for about 7 minutes together, and then I added some collard greens which I had sliced into small slithers. I let them cook an additional 5 minutes and added 1 cup of small pink beans which I had cooked previously. To this I then added 1 tablespoon cumin, 1 tablespoon chili powder and 1/4 teaspoon salt and pinch of pepper with 1/4 cup pure water. The water was to help the spices meld together with the other ingredients. I let this all cook together for probably another 5 minutes.

I live close to Clarksville Indiana, and we have a little place that makes fresh corn tortillas every day from 4 - 7 p.m. They are so good, that most times I cannot resist eating one on the way home while it is fresh and hot! On Tuesdays, I can get the tortillas without preservatives. The other days they make them for the stores and they have to be able to have a shelf life.

I had some of these tortillas thawed, so I heated them, (when I heat these tortillas, I just use a small cast iron skillet, high heat and no oil, just lay the tortilla into the hot skillet), added the beans, greens and mushroom mixture, placed some organic salsa over the top, and it was so good! If you do not like the tacos plain like this, you could really put your favorite taco toppings on here, just fix it your way!

I’m really working to eat more beans and greens every day so this was a good way to do it. Got to get this weight down!
