Very Simple Friday Lunch

Yes, it was that time again, I hadn’t really made any plans for Rusty and Ken’s Friday lunch, so I just took a look into the refrigerator and the counter top.

I came up with Boca No Chik Chicken patties with mustard, tomatoes, lettuce, purple onion, and avocado on whole wheat buns. Steamed corn on the cob and steamed edamame sprinkled with Himalayan salt.

Sometimes, the easiest, most simple meals are the very best. This was delicious and they told me so many times throughout the meal. Oh, yes, another thing that the south is well known for is “Sweet Tea”. I usually don’t get it because it is always sweetened with plain, old, empty calorie, white sugar, so I made some sweet tea and sweetened it with raw agave nectar. It is delicious!

You do not have to use the boca brand, you can use whichever one you like, or you can make veggie burgers yourself. I have a couple of recipes for them on this blog, and there are many recipes for different veggie burgers on the blogs in my Weblog link section.

And, just a little personal information, the salt and pepper shakers on the table belonged to Ken’s maternal grandmother, Hettie Sheckells. She gave them to my mother-in-law, Wanda Sheckells Vetter the day she married Ken’s dad, Kenneth Vetter. Wanda took them to the Family Homecoming a few years ago to auction them off during the auction they have every year to raise money for the homeplace! I won the bid that year, so now they sit on my table!

Never be afraid to just dig into your refrigerator and cabinets and come up with a simple, delicious meal. Sometimes they are the best!
