You all know that Ken is the love of my life. I love that he wants to be healthy and I love to cook for him the way he wants to eat. I enjoy eating that way too, well, at least most of the time! I also love to cook for my brother, Rusty. Next to Ken, I do believe Rusty loves my cooking almost as much. He tells people he lives for Fridays.
Well, this day I made them some veggie burgers for lunch along with a Pasta Salad which I adapted from Josh at My Vegan Cookbook. I didn’t have all the ingredients to do it exactly like his, but it was close. You can try his recipe here.
They both loved the burger (Amy’s California burger) I just made a little romaine/avocado salad for the top of it, and served it with the pasta salad. It was delicious! Rusty said it was the best veggie burger he had ever had!
Also, I mentioned before that I made some food for Rusty and Penny’s 25th wedding anniversary celebration. Here is a picture of the eggplants I roasted to make Baba Ganouj.
I love the way the eggplants look after they have roasted. I also love Baba Ganouj. It is wonderful for a party. Whenever I make it, it is almost always totally eaten and everyone always wants the recipe.
