This was one of the best soups I have ever made. I absolutely loved this soup. It was an idea I got from “Rachel Ray”, but it is a little different in that it is totally vegan.

It has been so cold here lately, that this dish was very warming and soothing to the soul! It would be really good if you served it with some homemade cornbread, but Ken and I ate it with some crisp, whole-grain flatbreads.

I had another bowl with supper this evening as a side dish. As all soups seem to be, they get better every day.
