I have really been offline with regards to posting to this blog. I have gone back to teaching for the American Red Cross, after several weeks off, and I had a lot of teaching to catch up with. I had also been preparing for my brother, Rusty, (you all know him as the Friday guy), and his wife, Penny’s 25th wedding anniversary. This soup is one of the things I made to take for the dinner.
It was a delicious, minestrone type, soup. I made a huge pot and I mean a huge pot. There was not quite a gallon left (out of about 6 gallons) for Rusty and Penny to take home.

Here’s the recipe. Enjoy this soup. It is so delicious! We had some wonderful Baba Ganouj and Hummus with vegetables that we ate with it.
I want to thank my dear friends who have called to inquire after me since it has been so long since I have posted. I am alive and well, but our computers were hacked and had become what is known as a “zombie”. Our ISP cut our connection to the internet to bring it to our attention and we either had to get it cleared or permanently loose access from Insight. Ken had to reformat our hard drives and reinstall windows. He immediately installed openSUSE and I am having to learn a new OS (Linux). I am figuring it out, reorganizing my information and I will be back to posting regularly now.
