Vegetable Broth, Raw Oatmeal for Breakfast and Roasted Barley Tea

What do these three things have in common? They are things we’ve done today, so I thought I’d just share some pictures with you all.

As you know, tomorrow starts our 2-day clear liquid fast, so we took the vegetable broth out of the refrigerator and let it come to room temperature and then brought it to a boil again and let it simmer for about 4 hours today. It will be good tomorrow.

Good For You Broth

Ken had my recipe for raw oatmeal for breakfast this morning and now he wants to have it every day! I simply took 1/2 cup uncooked, organic whole oats, and then covered them with 1 cup organic, plain rice milk to which I had added 1/4 teaspoon vanilla and 1 teaspoon agave nectar. I covered them and put them into the refrigerator for 2 hours. I removed them from the fridge and added 2 teaspoons of cinnamon (cinnamon is great for helping to lower blood sugar), 1 Tablespoon raisins, and 1 Tablespoon walnuts. It is delicious and if you have never tried oatmeal this way…You Must!

Roasted Barley Tea. Our new favorite drink. They say it is good for digestion and the eyes. We had this tea when we were at our daughter’s house in Michigan over the holidays. Sona made it for us. Thank you, Sona. Sona took Jenny and I to the Korean Market in Grand Rapids, but they didn’t have the roasted barley tea, just in tea bags. I bought some of them, but it wasn’t as good as the tea Sona had made for us at her house. Ken and I found the Oriental Supermarket in Louisville yesterday and we went there looking for roasted barley. Found it! Today I made the tea and it tastes just like I remember it. I can drink this stuff all day long. It has no caffeine, but it is just so good. We especially like it room temperature.

10 cups of boiling water into which you put 4 tablespoons roasted barley. Once you add the barley to the boiling water, turn to simmer, cover and let simmer for 20 minutes. At the end of 20 minutes, turn off the heat and let sit to begin cooling process for about 30 minutes. Strain into a glass pitcher or jar. Enjoy!
