Veganomicon

I have a few posts to catch up on, so I’m going to do that today. I received a new book for Christmas, it is Veganomicon. I had seen it on all the other food blogs I visit, so I decided to ask for one for Christmas.

On Friday I made 2 dishes from the book. Chickpea Cutlets and Leek and Bean Cassoulet with Biscuits. We absolutely loved the Chickpea Cutlets, but I was a little disappointed with the blandness of the Leek and Bean Cassoulet, although it did look very delicious! Ken seemed to like it well enough! He had 2 servings!

I am sorry, but I cannot publish the recipes here as they are copyrighted. It is a delicious meal with vegan mashed potatoes and vegan gravy. The mashed potatoes I just make with rice milk and earth balance spread. This is a dish that you could very easily serve to your carnivore friends.

What a great picture of all that beautiful food stuff on the counter with the cutlets right there in the midst! This was truly a great meal. I will definitely make it again.

Beautiful dish, just a little too bland for me. I’ll probably work on tweaking it a bit with some seasonings, but it would be worth your try. Just do a taste test before you put the biscuits on top and put it in the oven.

The book is wonderful and very worth the money. So many days worth of meals on the pages between the covers. I can’t wait to try them all.
