Vegan Stromboli

Ken and I are both big college basketball fans and right now, we’re football fans since our hometown “Colts” are in the playoffs, well were in the playoffs. :( No seriously, we both love college basketball and like pro football.

So, of course you have to have some kind of sandwiches for games, right? I made up Vegan Stromboli’s!

1 red pepper chopped
1 green pepper chopped
1 small onion chopped
6 shiitake mushrooms chopped
1, 14 ounce can tomatoes, pureéd
1 package of boca crumbles (box contains 3 packages, just use one)
Vegan Parmesan, (or regular if you are doing vegetarian)
Sprinkle of granulated garlic
Sprinkle of italian seasoning

Place 1 Tablespoon olive oil in iron skillet and add veggies. Sauté. In the meantime, take a small can of whole or diced tomatoes and pureé them and place them in a saucepan and allow to reduce by about 1/2. Add to veggies. Add boca crumbles and let heat through. In the meantime, cut your french loaf in half lengthwise and then spread cooked mixture on bread.

This was a great sandwich. On the top cover, before putting it in the oven, sprinkle with some granulated garlic and put on some vegan parmesan. You could put vegan parmesan on both sides. If you just want this to be vegetarian, go ahead and use some shredded cheese. Sprinkle the top of the cheese with some Italian Seasoning.

Serve with oven-baked fries sprinkled with creole seasoning. So delicious and just fabulous for game time!
