If you remember, I made a “Double Layered Pumpkin Cheesecake” for New Year’s Eve. Well, my husband loved that cheesecake so much, I decided to make another one, only I wanted to make it different.
I had some frozen strawberries that I let thaw! Make sure you put them in a colander to drain for about 1 hour before making this so that a lot of the juice can drain out of the strawberries. I made this cheesecake just the same as the other, but I didn’t put in the pumpkin and cinnamon and those other spices that go with pumpkin. I used pureéd strawberries in place of the pureéd pumpkin, same amount. I added about 1 tablespoon of date sugar to the food processor and a little extra vanilla. It is really good!

I’ll make it again and he’ll take more pictures! I’ll continue to experiment with other fruits!
Don’t be afraid to experiment…the most that might happen is that you have to throw it out and start over, or it might be delicious!
