Our New Year’s Eve Contributions

We went to friend’s house for New Year’s Eve. I made a few things to take along. Savory Pumpkin Bread with Roasted Red Pepper hummus (recipe below), the Vegan Cheese Ball from My Vegan Cookbook and Double Layer Pumpkin Cheesecake from Fat Free Vegan. I wish we had taken better pictures, so I’m sorry for the poor quality. Ken just forgot to take the pictures before everyone got into the stuff!

I have to tell you, this cheesecake recipe is so delicious. You would never know it was vegan and that it really doesn’t have cream cheese in it. Same with the cheeseball. Several people said there is no way that doesn’t have cream cheese in it! All the food was so good and the Pumpkin Bread has easily become one of my favorites. I love to make a sandwich out of the pumpkin bread, hummus, lettuce, tomato and purple onion. It is the best flavor combination.

Recipe for the hummus:
Roasted Red Pepper Hummus
INGREDIENTS
1 (15 ounce) can garbanzo beans, drained
1 (4 ounce) jar roasted red peppers
3 tablespoons lemon juice
1 1/2 tablespoons tahini
1 clove garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1 tablespoon chopped fresh parsley

DIRECTIONS
In a food processor, puree the chickpeas, red peppers, lemon juice, tahini, garlic, cumin, cayenne, and salt. Process, using long pulses, until the mixture is fairly smooth, and slightly fluffy. Make sure to scrape the mixture off the sides of the food processor in between pulses. Transfer to a serving bowl and refrigerate for at least 1 hour. (The hummus can be made up to 3 days ahead and refrigerated. Return to room temperature before serving.) Sprinkle the hummus with the chopped parsley before serving.

  • I gotta try that double layer pumpkin cheesecake! I think I’ll make that for Valentines day. I gotta do some cutting back and get out of the holiday mode, it’s almost the middle of Jan and I’m still eating left holiday food.

    I did something awful tonight. I was making a vegan tamale recipe and somehow a piece of plastic got in the blender and got grated plastic in my chili sauce. We ate 1 & 1/2 tamales until Jess found a chunk of plastic in his tamale. I was starving and had to search for something else and throw out all my tamales. I had made a mound. Needless to say I was freaking out thinking I had poisoning from plastic but I did a search on the internet and seems I’ll be fine. I guess it will come out the other end. lol Ugh!

  • Yes, it definitely will reappear! LOL You are so funny! So, other than the plastic, how was the tamales? Is it your own recipe or one you borrowed? Can you share?

  • The Tamales were great. Yes, it’s my recipe adapted obviously from a meat tamale. The main thing was getting the chili sauce right, the rest is pretty much as it always is in a tamale, mesa flour and water. I’ll have the recipe on the website when it goes up. I’m doing the photos for the recipe today, from ones I saved from yesterday’s plastic meltdown. Hopefully the plastic flecks will not be visible in the photo. lol I’m kind of thinking about rolling out my recipes slowly on my blog, even before I get the website ready. I’m getting anxious.
