And yes, it is vegan! Sometimes you just want something, you know? It’s cool outside, the Colt’s just got beaten by the Patriots
and I wanted something. So I made hot cocoa.
2 1/2 cups original rice milk (unsweetened)
2 Tablespoons unsweetened, organic cocoa powder
2 Tablespoons raw sugar (demerra)
1/2 teaspoon orange extract (organic)
1/2 cup vegan marshmallows
Slowly bring rice milk to a boil and add cocoa, sugar and orange extract. Stir briskly with a whisk until well combined. Pour into 2 cups and top each with 1/4 cup of vegan marshmallows. I’m not sure on calories, but it isn’t something you would have every day, just now and then, when the Colts get beat, which hopefully won’t be often!
Okay, so I figured out the calories and it is 245, so not so figure friendly, but sure beats eating a bag of Oreo’s! I’ll have to work on this. I’ll have to check the calories on soy milk as the majority of the calories came from the rice milk.

Hot Cocoa with orange extract with marshmallows. Not something I would want every day . . . AH HUM. . . OK! OK! maybe I would want it everyday, but I will choose not to. Hopefully, Jackie will not make it very often. However, the weather is getting chilly. Jackie made the No Bake Cookies Friday and it is now Sunday evening and if she were to make more I would eat them. I would want to eat all of them! maybe with Cocoa?
