Hi Jackie -
My time with Red Cross is winding down now, and I am keeping my fingers crossed for future federal employment (or any decent job opportunities - cannot let my college degree(s) go to waste). One of the most memorable things resulting from this VISTA position with the Red Cross has been working with you, Karen, Destiny, and all of the wonderful volunteers. It has been wonderful working with you. I have learned a lot along the way, especially about nutrition.
Your food is absolutely wonderful! I could swear up and down about that for hours on end. I like food. Always have and always will. Hahaha. I have started eating healthier, and you contributed to that. After eating unhealthy, processed, fried food for 4 years while at Hanover, it was time for a change. I have gained a lot from your knowledge about proper nutrition and its effects on physical, mental, and spiritual functioning. Now, I am not ready to start a vegan diet (I’m a die hard omnivore), but I do understand the importance of maintaining a healthy, balanced diet. People unwittingly poison themselves by what they eat. We do not even think about it most of the time. CRAZY.
Well - back to the point. I love your food. I have loved working with you. It has been awesome getting to know you this past year. I will miss you and the rest of the crew when I have moved on to ‘bigger and better things’. I had better save some things for the official good-bye, so I will quit for now. Ken - I haven’t forgetten about you. You and Jackie are wonderful people, and it was a blessing for me to get to meet you both. Thanks for the knowledge and friendship!

Thank you for posting on Jackie’s foodblog and sharing your kind words with everyone who visits her foodblog.
We are thankful that we have had the opportunity to share the things we have learned about nutrition and what a healthy died and lifestyle is with such a fertile mind as yours.
With the Internet, and other current technologies, there is no reason for people to ever really disconnect from a valuable relationship. I’m trusting that as time passes our friendship will continue to prosper and grow.
