Yes, even vegetarians/vegans like chocolate!
Another old childhood favorite. I may be 52, but I can still remember all the things that made me happy as a child, and then all the things that made me happy doing with my two girls, Rosemary and Jenny. No Bake Chocolate/Oatmeal Cookies makes me smile. I use the recipe out of the Sheckell(s) Family Cookbook, the one by Melody Sheckells.
Before I start, a funny little thing about the Sheckell(s) Family, (they are my husband’s maternal family), some of them put an “s” on the end of their name, some do not, and this is within the one family. Some brothers have the “s” some brothers do not! It is a riot and often the cause of heated argument!
So here is Melody’s recipe for No Bake Chocolate/Oatmeal Cookies (I have veganized them!)
2 cups sugar (I use raw demerra)
1/4 cup unsweetened cocoa
1/2 cup rice or soy milk
1/2 cup vegan margarine
1/2 cup peanut butter
2 teaspoons vanilla
3 cups old fashioned oats
Combine sugar, cocoa, milk and butter in large saucepan. Bring to a boil, turn heat to medium and boil for 1 minute, (I stirred while it is boiling). (it is important to boil for exactly 1 minute). Remove from heat. Add peanut butter and vanilla and stir until peanut butter is melted. Add oats. Mix until well blended, then drop by teaspoonfulls onto wax paper. Let cool to harden. (Made 27 cookies, but I used a flatware tablespoon instead of a teaspoon).
It is best to not try to make these cookies on a rainy day as they will never harden enough. These cookies turn out just perfect each and every time for me.
