Update to Lemon Macaroons

Ken made a new batch of the Lemon Macaroons (original recipe from goneraw.com). He actually doubled the batch, but used the same amount of lemon juice and lemon zest. They are delicious.

This is a very simple process, and here is everything Ken used to make these delicious cookies.

Lemon Macaroons (goneraw.com)

Ingredients: (Double Recipe)
2 cups cashews, soaked for 4 hours then drained and dried
zest of 1 lemon
½ cup fresh lemon juice, (approximately 2 lemons)
2 cups dry, shredded coconut
¼ cup agave
¼ honey (the picture shows maple syrup, Ken got in a hurry)
NOTE: Using honey would make it not vegan. I would use all agave or even try the maple syrup.

Preparation
Process cashews in food processor until they are pasty in consistency. Mix in all other ingredients. Place 1 tablespoon cookie dollops on a dehydrator sheet. Dehydrate for approximately 12 hours at 105°F (could also dehydrate at 115°F for 8-10 hours with similar result). You could also bake these in the oven, just bake on the lowest setting and check if done in 20-30 minutes.

Drying the cashews and using the single batch amount of lemon juice made the mixture drier, it was not as wet, and was easier to work with. Ken could put it right out on the dehydrator screen and didn’t have to use the teflex sheets.

    I love your kitchen!! Mine is rv size….

    please do a piece on using the saladmaster, I am getting ready to put the one I bought back on ebay! I can’t seem to get it. I found a small mouli-julienne with 5 discs at a thrift store for 1.00 and it works great!
